Slimway recipe for Roast beef and Vegetables
Roast beef with roasted vegetables.
1.5 kg topside of beef.
4 carrots.
2 parsnips.
4 medium potatoes.
2 beef stockpots.
salt and black pepper.
Mixed herbs
This recipe is an excellent dish for the slow cooker or instant pot. Using the instant pot or slow cooker, both turn out equally deliciously every time.
Wash all the vegetables thoroughly. Cut the carrots, parsnips, potatoes, and onions into large chunks. Season the beef joint with salt and black pepper, and mixed herbs. Place in the bottom of the instant -pot, then place the vegetables and potatoes around the beef joint. Pour in two cups of water. Add the beef stockpots and close the lid on the instant-pot securely.
Turn on the instant-pot, make sure the steam valve is closed, and set the timer for 50 minutes.
Using the slow cooker, cook on low for 5 hours.
From the stock of your meat, add the gravy granules to make a nice rich gravy.
Garnish with parsley.
